This is one of my favorite mid-morning, mid-day or after dinner snacks! I love these kinds of tasty treats because they have so many health benefits that there is no reason for me to feel guilty. As if that’s not enough, there are only 3 ingredients! Now that’s something to get excited about!

So let me tell you all about the great things this fruit dip has to offer…


Coconut

Fat/Weight Loss

Animal fats are made up of Long-Chain Saturated Fats, which usually end up going to fat storage. Coconut oil however is made up of Medium-Chain Triglicerides (MCT’s) which are burned for energy! This Saturated fat is helpful in reducing cholesterol and heart disease and actually helps to stimulate the metabolism which can help you burn more calories and boost your energy!

Antibacterial/Immunity Boosting

Most likely, you’ve heard about coconut oil’s antibacterial properties. Because this recipe uses whole coconut meat, it retains those benefits.Like Breast milk, coconut oil is high in Lauric Acid which destroys harmful bacteria and viruses, and boosts your immunity system.

Coconut oil is also anti fungal due to its rich Caprylic acid content.

Skin/Beauty

As if the internal benefits weren’t enough, coconut oil is also great for glowing skin, boosting moisture and promoting skins elasticity.

Raw Cacao

Nutrients

Commercially produced Cocoa is not the same as raw Cacao. The more oft used product is roasted and processed which strips most of its nutritional benefits away. But raw Cacao beans retain all of their natural compounds. Raw Cacao is the most antioxidant rich food in the world, even higher than blueberries, and is rich with minerals such as potassium, magnesium, iron, sulfur, phosphorus, zinc and copper.

Mood Boosting

Both processed Cocoa and raw Cacao have long been known for their mood boosting properties. They work by promoting the release of neurotransmitters such as endorphins and serotonin which are ‘feel good’ hormones. Raw Cacao additionally contains natural mood boosting compounds such as theobromine and phenylethiamine.

Skin/Beauty

Because this superfood’s antioxidant content is involved in reducing the amount of free radicals in the body, it also provides anti-aging benefits!

Whole Cane Sugar

Nutrients

Of course sugar is sugar, but there are qualities to whole cane sugar that make a big difference. The processing of traditional refined white sugar is such that it strips away all of the nutrients that are naturally occurring in the sugar cane. Whole cane sugar simply evaporates the water, and therefore the product retains all of its vitamins and minerals including Potassium, Magnesium, Vitamin E, B-Vitamins, Iron, Manganese, Copper and Zinc.

One of the most important factors that makes Whole Cane sugar a better choice is the presence of Calcium. Our bodies need calcium in order to digest sugar. When Calcium is not present, as in processed white sugar, the body takes that calcium from our bones and teeth! Not good!

Whole Cane sugar also has a lower glycemic index, about half that of refined white sugar.

Superfood-Fueled Chocolate Coconut

Fruit Dip

Yield: Approximately 1 cup

Ingredients:

2 cups unsweetened Organic Shredded Coconut

3 Tablespoons Raw Organic Cacao

3 Tablespoons Whole Cane Sugar

Procedure:

Put all the ingredients into a food processor. Process for 7 minutes, then scrape sides of bowl.

*Don’t freak out if your mixture doesn’t seem to be changing for several minutes. Just keep going. Mine usually starts to come together at about 5 or 6 minutes.

Allow processor to cool down for a few minutes, then process for about 7 more minutes, scraping down the sides occasionally, until dip is smooth. (it will still have a little texture from the coconut, but will be liquified)

*Note: If your machine gets hot STOP and just let it cool for a few minutes. You do not want a broken food processor!

Enjoy immediately or store in the refrigerator. If refrigerated it will become solid, simply warm in a water bath before serving.
