Raw Kale and Apple Salad

Even though I’m Vegan, I’m not the biggest fan of salads. Weird, I know. But this raw Kale and Apple salad has the perfect blend of tart and sweet that makes my tastebuds sing!

This is one of those recipes that I’ve been making for years. I forget about it and then something will trigger my memory and I’ll remember how much I like it and I need to have it immediately! Its such a great salad because its got the almighty Kale and Apple Cider Vinegar, and only 6 ingredients!

It sits in the refrigerator to allow the vinegar to soften the Kale and for all of the ingredients to really meld, so put it together in the morning for a late lunch or dinner. Its also great the next day!

Raw Kale and Apple Salad

Ingredients:

4 cups tightly packed Kale, chopped or torn

1 apple, cored and diced

2 teaspoons toasted sesame oil

2 Tablespoons Agave

4 Tablespoons Apple Cider Vinegar

3/4 teaspoons garlic salt

Procedure:

In a large bowl (make sure it has room for tossing- as you see I did not and it was tricky!), add kale and apples.

In a separate small bowl, whisk the sesame oil, agave, brown rice vinegar and garlic salt until well blended, then pour on the kale and apples.

Toss well, cover and refrigerate for 6-8 hours.

Adjust sweetener and vinegar to your liking and enjoy!

So easy and so delicious.

  1. Making this tonight for dinner sans the oil and adding some toasted sesame seeds & toasted sunflower seeds. Delicious balance of tart & sweet!
