Oil-Free Hummus
Ok…so there is a tiny bit of fat in chickpeas, but this oil free hummus recipe doesn’t add any additional fat, so I’m considering it fat free. 😉 Regardless, it’s the perfect addition to your 30 days to vegan recipe list.
If you haven’t made your own hummus, you really should try. It’s so easy to make, you can customize it to your exact tastes, and because of the chickpeas, it is basically a blob of protein!
I’m even giving you a pita bread recipe so you can experience warm pita bread with your fresh hummus.

Oil-Free Hummus Recipe
Ingredients to make no-oil hummus:
1 can chickpeas (16 oz)
1/4 cup aquafaba (the brine, or liquid, from can)
2 teaspoons lemon juice
1 Tablespoon tahini
1/2 clove garlic
1/2 teaspoon salt
1/8 teaspoon ground cumin
Procedure to Make My “Fat-Free Hummus” Without Oil:
Add all ingredients, except for chickpea brine, to a food processor.
Add aquafaba by teaspoons, blending until smooth and the desired thickness. Taste and adjust seasonings.
Allow to sit 10 minutes before serving.
Fresh Pita Bread Recipe
Yield: 8 (6 inch) pitas
Ingredients to make pita bread:
1 package dry yeast
1 teaspoon sugar
1 1/2 c warm water
1 cup whole wheat pastry flour, sifted
2- 1/2 cups all purpose flour, sifted (plus more for dusting)
1 1/4 teaspoon salt
Procedure for homemade pitas:
In the bowl of a stand mixer, mix the yeast, sugar, water, and 1/2 cup of whole wheat pastry flour. Let sit for 10-15 minutes, until foamy and puffed up a bit.
In a separate bowl, sift the remaining 1/2 cup of whole wheat flour, 2 cups of all-purpose flour (reserving 1/2 cup), and salt.
*Note: measure flour before sifting).
Add the flour mixture to the yeast mixture and mix until combined into a rough mass. Add the remaining 1/2 of flour by Tablespoons until it can come together without being too sticky.
Using the bread hook, knead for about 5 minutes. The dough should mostly clean the sides of the bowl, but will still be soft. Scoop out of bowl. If needed, dust with enough flour to make it easy to handle.
Place in an oiled bowl and cover until doubled, about 1 hour.
Preheat oven to 500 degrees. Yes 500!
On a floured surface, turn out the dough and cut into 8 equal pieces. Roll them into balls. Hand shape into 5-6 in wide circles. Use flour to keep dough dry on both sides. You don’t want it sticking to the pan when cooking. But you don’t want too much flour! So just dust it, or blow it off before baking.
Place a glass pan in the oven for 5 minutes to heat.
Put circles of dough into glass pan in the oven. Bake 4-6 minutes on the first side. It should puff up. Flip and bake 2-3 minutes on the other side.
Keep cooked pita wrapped in a cloth to keep them soft and warm.
Whip out your hummus and go to town!
Love the use of aquafaba instead of oil. It made the hummus so creamy and guilt free!
