Vegan Flan Recipe
Ingredients:
½ cup organic sugar
2 ½ cups plain soymilk
1 cup coconut milk (canned) *(shake or mix well before measuring)
1 Tbsp + 1 1/4 tsp agar flakes
2/3 cup maple syrup
1 Tablespoon kuzu (measure in rock form- do not grind first)
½ cup water
1 ½ teaspoons vanilla
Procedure:
Put sugar in a small saucepan over low heat. Stirring constantly being very careful not to let the sugar burn. Working quickly, pour hot syrup evenly between ramekins. Set aside.
In a heavy saucepan, pour soymilk and coconut milk. Add agar and whisk well. Bring to a boil then lower heat, cover and simmer for about 10-12 minutes, or until the agar is completely dissolved.
*Note: You can test this by dipping a spoon into the mixture and making sure there are no flecks of agar left.
-Add maple syrup and whisk until well mixed. Dissolve Kuzu in water until there are no lumps. Increase heat to medium, and add to milk mixture, stirring until thickened, about 3-5 minutes.
*Note: The mixture will only thicken slightly, to the consistency of cream.
Take off of heat and stir in vanilla. Divide milk mixture evenly into ramekins. Refrigerate at least 8 hours or overnight.
So easy to make…even I was successful! Delicious, creamy and decadent. You will not be disappointed.
