Green Lime Chiller
This green smoothie was inspired by my absolute… body screaming… thirst the other day.
I don’t even remember why I was so thirsty. The fact that its, at least, in the high 90’s everyday where I live, might have something to do with it. All I know is…I was thirsty.
I reached for my favorite Evolution Green Juice (Sweet Greens and Lemon) out of the refrigerator and took a long…deep… drink. Ahhh… I stood there for a moment, actually letting the green elixir drip from my mouth. You know that sensation when it feels like even your cells are reveling in the hydration and nutrients they are being bathed in? Maybe you don’t. But its the best!
When I decided to make this green smoothie, I wanted it to have that nutrient blast that you feel when you drink greens, paired with an ultra hydrating, energizing and cooling smoothie. Coconut water and limes to the rescue on those ones!
My darling children were totally up for taste testing this one. And of course one of the best things about a smoothie is how quickly you can have it in your hot little hands! Make it at home on a hot day and see what your kids think about drinking this green smoothie!
p.s. You don’t have to mention the spinach to the kids. Just saying.
Green Lime Chiller
Yield: 7-8 cups or 56-64oz.
Ingredients:
2 cups Coconut water
1/2 bunch fresh spinach, washed well
2 cups frozen peaches
2 cups frozen pineapple
juice of 2 small/med limes (or to taste)
1-2 cups of ice
*opt. 1-2 Tbsp Agave, or other natural sweetener
Procedure:
In a blender, add the coconut water and the spinach. Blend until smooth.
Add frozen peaches, frozen pineapple, agave, if using, lime juice, and 1 cup of ice. Blend until smooth.
Add more ice to reach your desired thickness.
In less than 10 minutes, you have made something delicious, refreshing and good for you too!
