Cinnamon Cashew Date Milk
Ok, now this is good! This cinnamon cashew date milk recipe makes a lightly sweet and creamy beverage with a dash of cinnamon. It’s like a dessert drink! And there’s no added sugar in it, either. The sweetness comes only from the dates, making this the perfect vegan drink to try on your 30 days to vegan journey.
What Does Cashew Milk Taste Good With?
Cinnamon cashew date milk is a super delicious snack paired with a banana or piece of toast, and it’s full of good for you stuff. The dates boast a high fiber content, and the cashews offer a dose of heart healthy fats and are high in antioxidants.
Chinese medicine and Ayurveda use cinnamon to treat things such as colds and indigestion, and to improve energy and circulation. Cinnamon also possesses anti-inflammatory qualities and has even been shown to lower bad cholesterol.
I usually drink this cashew milk cold, but it’s a special treat when you heat it up!
Cinnamon Cashew Date Milk Recipe
Yield: 64 ounces
Ingredients to Make Cinnamon Cashew Date Milk:
1 1/4 cup cashews*
*(soaked in water 2-4 hrs or un-soaked in Vitamix)
8 medjool dates, pitted
6 cups water, divided
1 teaspoon cinnamon
pinch salt
Procedure for homemade cinnamon cashew date milk:
Put the cashews, pitted dates, cinnamon, salt and 2 cups of water into the blender and blend until smooth, about 2 minutes in a high-speed blender, or 4-5 in a standard blender.
*Tip-rub between fingers to test for graininess
Add remaining 6 cups of water and blend until mixed well.
*(add up to 2 more cups of water depending on your taste)
That’s it! You can also pour it on your hot cereal, or use it in your shakes and smoothies. If you like it thinner add more water. But I like it just as is. Yum!
*Note: To soak the cashews, place them in a medium bowl and cover with water. Allow to soak for 2-4 hours. Drain and rinse until water runs clear.
